FOR THE COOKIE DOUGH

MELTED BUTTER: 110 grams

FLOUR: 230 grams

EGG: 1

BROWN SUGAR: 165 grams

CHOCOLATE CHIPS: 120 grams
How to Make Brookies
For the Brownie Batter:
Step 1
Mix the chocolate with the butter and let them melt together, until they’re smooth.
Step 2
Separately, beat the eggs with the two sugars until they’re frothy.
Step 3
Add the melted chocolate and keep mixing with an electric whisk.
Step 4
Add the flour and the cocoa powder and incorporate them into the mixture with the electric whisk.
For the Cookie Dough:
Step 5
Mix the melted butter with the sugar and then add the egg and mix well until the elements have combined.
Step 6
Add the flour and keep mixing until you obtain a homogeneous dough.
Step 7
Finally, add the chocolate chips and incorporate them into the dough with a spatula.
For Assembly:
Step 8
Line a high-sided 25cm baking pan with parchment paper and pour half of the brownie batter in the pan. Place generous cookie dough pieces on top of the batter.
Step 9
Cover with the remaining brownie butter and then finish with the final chunks of cookie dough. Bake at 374°F (190°C) for 25-30 minutes. Let the brookies cool. You can sprinkle with some salt or add more chocolate chips, if you like!
Step 10
Cut into squares. Enjoy!
