Instructions:
Step 1
Unroll one sheet of puff pastry on a clean surface. Place the second roll on top.
Step 2
Roll them up together into a log. Chill in the refrigerator for 1 hour.
Step 3
In a large bowl, whisk together the egg, yolk, sugar, cream, and milk (add vanilla if using). Refrigerate for at least 1 hour.
Step 4
Slice the chilled pastry log into rounds (about ½ inch thick).
Step 5
Press each round into a muffin tin or custard tart mold to create a shell.
Step 6
Set each pastry-lined mold into a paper case or muffin cup.
Step 7
Pour the chilled custard mixture into the pastry shells, filling about ¾ full.
Step 8
Bake at 420°F (210°C) for 23 minutes, or until the custard is set and the tops are browned.
Step 9
Let cool slightly in the tin.

Serve warm or at room temperature — and enjoy!
